Easter baking…

I love a themed bake, and what better way to celebrate Easter with lots of yummy cake.

My absolute favourite, and a must-bake every year are these Creme Egg Brownies this recipe is perfect every time, and everyone loves them!

Red velvet cake goes down well for any occasion, I find the Hummingbird Bakery recipe the best…

These were made with my Vanilla Cupcake Recipe which is the easiest batter to make, chocolate covered cornflakes, mini eggs and vanilla buttercream. Amber pretty much did all of it, I just helped the icing and decorating with the nests we had made from cornflakes…

Amber’s birthday…

It’s a month since Amber’s birthday and I’d completely forgotten to finish off this blog post!

It had been about 6 months since we moved to live by the seaside and Amber loves to talk to the mermaids in the sea! So I thought what better theme for her birthday than the sea and mermaids…

For her actual birthday I made blue velvet cupcakes, these weren’t as blue as I hoped, more green, so will need more practise but they tasted so good! And I absolutely love the mermaid tails and shells made from candy melts and rose gold edible paint. Some pearls and jelly diamonds finish the cakes off perfectly…

LOL dolls were her favourite presents this year, along with Polly Pockets (some vintage ones I found on ebay) and the numerous bags she was spoilt rotten with…

For the birthday party I made a giant clam shaped cake, this was so much fun and fairly easy to do, using two lots of batter from my fail-safe vanilla cupcakes recipe, painted with edible rose gold paint and pearl powder, filled with buttercream and a fondant ‘pearl’. The pearl covered in the pearl powder, Amber attempted to eat that in one go… and almost managed it, yuck!

We wanted party favours that would be enjoyed rather than tacky plastic junk that would break in 5 minutes and annoy parents! We thought these treasure chests were a great idea to fill with a few chocolate treats, the chests were only £2.50 each on eBay so overall I think these were cheaper than buying party bags and junk to go inside. Amber still plays with hers now and some adults were a little jealous they didn’t get one! If you’re organised enough in advance you can get these for around £1 each directly from China on eBay or Amazon.
