I love a themed bake, and what better way to celebrate Easter with lots of yummy cake.

These were made with my Vanilla Cupcake Recipe which is the easiest batter to make, chocolate covered cornflakes, mini eggs and vanilla buttercream. Amber pretty much did all of it, I just helped the icing and decorating with the nests we had made from cornflakes…
I was asked for my big Mac inspired recipe and couldn’t find the link I originally used, so thought I’d write my own short blog on it…
I love a McDonald’s, but sometimes a nice homemade version is needed. This sauce is similar and easy to make. You can buy burgers from the supermarket to make it easy on yourself, I just love a chunky burger and they are so easy to make.
For the sauce;
- Classic yellow mustard
- Optional – quarter of an onion
For the burger;
- Beef mince
- 1 egg
- Salt and pepper
- Either quarter of an onion or onion powder
To put it together;
- Bread rolls
- Cheese slices
First off make your burgers (or pop your shop bought ones on to cook)
To make simply squash together the mince, egg, salt, pepper and onion in a bowl until binding together then form burger shapes. I use a burger press for mine, this one is amazing as it makes it easy if you wanted to put fillings inside the meat.
Grill your meat until cooked through, meanwhile prep the sauce…
Finely chop the onion (optional) then mix about a tablespoon of mayonnaise, a tablespoon of ketchup, a tablespoon of relish and half a teaspoon of mustard. Then taste test, I often add a tad more relish or ketchup to mine, but I’m a big pickle fan so love that taste.
Prep the buns, as I said I love a gerkin!
It’s not until you’re older, sometimes not until you have your own that you realise the lengths you go to, to provide the best for your children, I’d do anything to protect them, to nurture them and to make sure they turn out to be the best possible little humans… You realise all your own Mum has done for you and everything she still does… Grateful for my Mumma, my Granny and for my babies!

I wasn’t really expecting anything this year, other than the crafts they do at nursery, so it meant a lot when my mum helped Amber with a few bits. And how amazing is Amber’s writing getting now?!
We had a little afternoon tea with my mum and grandparents. I had bought a mini bundt tin and wanted to experiment with those and marbelling, I was pretty happy with how these turned out…
